How is today the last day of February? This year is flying by.

Today is gonna be another massive laundry day. Well…I’ll get a normal amount done today but it’ll be continued on Thursday. I can usually knock out a good 5 loads in one day, but Mando and I have at least 2-3 loads of laundry EACH. I had only really been staying on top of washing the boys clothes and the towels and this is what I get. I really wanna knock it all out this week and get us back on track. 

Speaking of getting back on track, Mando and I both realized that we haven’t been eating so well. We’ve been eating out A LOT (which doesn’t help with saving at all) and we’ve been buying too many treats when we go grocery shopping. He went with me to do the grocery shopping yesterday, and I think we did a really good job. Nathan had been asking for pizza for like 3 days so we couldn’t say no, but we made it at home and mixed it up a bit.

English muffin pizzas! πŸ•

Ingredients: 

Whole wheat English muffins

Mozzarella cheese(shredded)

Pepperoni (make sure the pepperoni is already cooked)

Pizza sauce 

Directions: 

Cut the English muffins in half, I made sure to cut Nathan’s halves a little thinner cause he’s not a huge fan of crust.

Pizza sauce first, then cheese, then pepperoni! 

I popped them in the oven at 350 for 5 minutes, just long enough to melt the cheese, and they were perfect! 

Of course any cheese, meat or veggies can be used, this is just what I used. Nathan helped and had a lot of fun. 

Turkey meatloaf.

So I first made this for Mando years before we had any childrens. Once Nathan got to the point where he was eating solid meals I thought this would be great for him because I’m able to sneak him veggies he wouldn’t normally eat. 

Ingredients:

-1 red bell pepper

– 1 medium carrot

-1 medium onion

-3 or 4 cloves of garlic

-1 tbsp of olive oil

-2 pound of ground turkey

-1/2 cup of bread crumbs 

-2 large eggs 

-3 tbsp ketchup 

-salt and pepper

Directions:

Preheat the oven to 375. Put all the veggies in a food processor and pulse until the mixture is finely chopped. (The smaller, the better. The kids or husbands will be less likely to notice the veggies if they’re chopped smaller, but you don’t want to pulse the veggies into a paste.) In a medium skillet, add the olive oil, veggies, and salt and pepper and cook the veggies until soft. (6-7 minutes or so, I don’t time this lol just eye it.) 

Tip: I usually wait until the veggies are done cooking before I start this next part, that way they’ve cooled down before I start mixing it together. 

In a large mixing bowl combine the turkey, eggs, bread crumbs, ketchup, and cooled veggies and mix together with your hands. (You CAN use a spoon or something else to mix, but in all honesty, your best tool for this job is your own two hands. But, to each their own.)

Once everything is mixed together, pour the mixture into a loaf pan. I like to line the pan with foil(makes for an easier clean up) and bake for 1 hour.

Once out of the oven drain some of the grease and let it cool before cutting and serving.


And what goes better with meatloaf than POTATOES! Here’s my super delicious and EASY mashed potato recipe.

Peel and wash about a pound and a half of russet potatoes. Chop into medium sized chunks and add to a pot of salted water. 

Let them boil until cooked.

Once they’re cooked through(soft, but not mushy) drain them and add them to a bowl. 

Get out your hand mixer (for some reason I always like whippin this thing out). Add veggie broth to the bowl  of potatoes(a little at a time) and start mixen. Mix until smooth (adding as much broth as needed.) 

Salt and pepper and butter to your liking.

Jake is kinda being a handful lately. I think he’s having a growth spurt, he’s eating so much and he’s such a sleepy head. I also think he’s gonna sprout some teefs soon.

So no big deal, but 6 loads of laundry down, and I’m still not done. I think I have 4 more to go. And I need to clean the bathroom. And cook the chicken. And I forgot to buy more potatoes. I’m failing today.

But hey! I got my workout in! Kinda, I had one more set of my circuit left when I noticed Jake making poop faces. He was sitting in his bumbo seat so it made a pretttty big mess. Thank God I had an extra onesie in my bag.

I just realized I never posted my turkey meatloaf recipe! I’ll have to start typing that up and get it posted so stay tuned!

Laundry, man. I swear, it’s never ending. And why do men have so damn much of it?! Why 3 pairs of underwear in one day?! If I can soldier through the day in one pair of undies, why can’t you?! 

Anyway. I got to the gym this morning and got grocery shopping done. πŸ™ŒπŸ» I need to clean the house from top to bottom but I know it’s just not gonna happen today. Mando works at 9 tonight so he has to leave here at like 7. 

I think this week is gonna be a good week for work for him. πŸ™ŒπŸ» I can’t wait to keep putting money away for that down payment. 🏠 here we commmmmeeeee!

So it’s officially been 1 year since I found out I was pregnant with Jake. I don’t know how it feels like the day just drags by but when you really stop and think about it a full year just went by like that. We’re getting closer and closer to Nathan’s 4th birthday party, I’ve really gotta get some pictures of that this year lol we’ve got some badass decorations. I know, how badass can birthday decorations be? lol they’re pretty cool though. I’m super excited and I know he is too.

It’s 10:45 and I’m not in bed yet, but I’m close! Jake just woke up to eat so I’m getting him back down, then I have to pump and it’s off to bed for me.

Today was a really good day. I wish could say that I got to spend Valentine’s Day with my husband but he worked in Carlsbad today. He was up at 3:45am and didn’t get home til 8. It’s supposed to rain this weekend and I really can’t wait to get some time with him.

Today was a good day because the boys were both in really great moods. Jake was up at 6 as usual and Nathan was up around 6:30. I got to the dojo to workout, and they were both super cooperative the whole time. We stayed there for a few hours so Nathan could let loose and run wild. After lunch and nap a friend from high school came over. She has a little boy and twin girls. So while the boys played we sat with the babies and talked the night away. It felt just like we were back in high school. When we were together we’d always laugh nonstop and talk about everything. It was really fun, I’m so glad we got together.

In workout news- I’m only on day 3 of the workout.I didn’t get to the dojo on Monday. I had so much laundry to do and we had no food. Nathan drew a couple pictures for my grandparents so we went to the post office and mailed those along with a Valentine’s Day card for them. Then I took the boys to the park, we went grocery shopping and then I spent the day getting some laundry done.

Exciting right?! 😜 remember the name of my blog..this is the stuff that’s exciting to me lol.

I made a turkey meatloaf for the guys for dinner this week so I’ll get a few pictures of that tomorrow and the recipe up. It’s one of their favorites and I feel good about making it. (I sneak veggies in there so it’s healthier than they think)πŸ™Š

This will be what I follow for my dojo workouts. 


I found this on Pinterest after I had Nathan. The workouts are fast, a little tough, but they definitely get your blood pumping and a sweat workin. 

As of today I’m on day 2. I did both at the gym. I was just going to do the full 30 days of this, it wasn’t until today that I decided to go every other day and make them my dojo workout. 

For the dojo workout I’m planning to take my gloves with me and incorporate bag work along with some of the workouts.

Hopefully the days I go to the gym I’ll remember to post which lifts I did that day. Maybe I’ll even record some videos from the dojo workouts. 😁

So I don’t know wtf it is about me having the tiniest little amount of dairy that just sends me off the deep end. I was doing so good controlling my cravings and talking myself out of wanting to have these things but once I had the smallest amount I can’t stop. 

So in workout news for me, I’ve decided I have to take a step back from Muay Thai. We just don’t have the money for it right now and I wasn’t getting to class as much as I would’ve liked to, especially for the $$ we were putting into it. I will however, continue working out at the dojo in their gym and on the mats to use the bags, I just won’t be doing the classes.

Also, before yesterday I hadn’t been to the gym since Saturday. Which is annoying because that means I hadn’t gotten my time to myself. I was really feeling it too. I just felt so on edge at all times, I was snapping hard at things that weren’t all that serious. 

So now it’s really time for me to step up and get together a serious workout routine for myself with these changes coming up. I’m gonna have to make the time for myself, and make sure I get my workout time in. 

I’ll update tomorrow(later today, it’s 2:45am right now) on the routine I’ve got working in my head.

This month has been a struggle. We’re 8 days in but it’s been real.

My husband works in asphalt, so when it’s raining, too cold or too moist out, he doesn’t work. Which lately has been A LOT. He drives for Uber in the meantime, but the money he makes with that isn’t what we’d normally get from his job. 

I managed to put aside a good amount of money last month but after rent and groceries this week, we were barely left with anything. Maybe a couple hundred to our names. And it sucked. My dream of getting us into a house was pretty much shattered. 

We did our taxes tonight though and I swear my prayers were answered. By the time our lease is up in October we will be in a house and I’m just So. Freakin. Happy.

I can put back what we had to spend of our savings, get Nathan his bed and keep saving.

Jake is officially 4 months old. Big boy is 17 pounds 3 ounces and 24.5 inches. We started him on brown rice cereal tonight and he did really well. Hopefully this keeps his belly fuller longer so this mama can get longer than 2 hours of sleep at a time.

Nathan’s currently licking a string cheese. Just had to throw that in.

I was doing a really good job sticking to going vegan up until today. I had too much time in between my snack and lunch and I started getting jittery. My blood sugar started to drop and I had to get my hands on some sugar asap…which just happened to be in the form of 2 chocolate chip cookies. 😳 

I also haven’t worked out since Saturday and I’m super disappointed. I was hoping to go to practice today, but that didn’t go as planned. πŸ˜’

Nathan did his first story time at the library. He seemed a little shy singing songs and doing thins with the group but he definitely liked it. He did really good with the arts and crafts at the end. I’m hoping to make this a weekly thing that way he can get used to it and hopefully this will make his transition to preschool a little easier. 

I have more to fill you in on but I’ll keep this blog entry short and sweet. More tomorrow. 

Workouts.

So I have a workout tab on here for all workout related posts. So far it has 2 about Muay Thai, but they’re not really as in depth and descriptive as I imagined my “workout”‘postings being. 

I’ll be very honest and say that I haven’t been on my game much. I haven’t been too motivated not only with my workouts, but with my eating as well. But with the beginning of February I made a promise to myself to step it up. Make no excuses about workouts and get my shit together with my diet.

For the past year and half I’ve been a vegetarian. Before that I was a vegan for 4-5 years and a vegetarian for about 9 months before that. I’ve never liked meat or eggs really, so there’s no problem there. But dairy…it just calls to me. And it’s a call I can’t seem to ignore. It’s a true addiction guys. Anyway, besides me being a gassy pimply mess it was giving poor Jake really bad gas. So for me, it had to go. 

Now as far as my workouts go, it’s kinda hard to get myself to the gym these days. When Mando works I haven’t been working out. And it’s really frustrating. Until Jake is 6 months old I can’t enroll him in kids club at the gym, and obviously I can’t go to practice at the dojo without someone to watch the boys. I have parents, I have a brother, cousins , Mando’s sisters, they’re all willing to spend time with the boys and watch them for me. But then I feel guilty. I feel like I’m becoming a burden. They have they’re own lives to live. This is just me. It’s my own thing to get over and I’m really trying. 

This week coming up, when Mando works I’m going to try to take them to the dojo so I can have them on the mat with me while I workout. I’m gonna give it a couple shots to see how it works out. I’ve also started a different workout schedule but I’m still workin a few kinks out, I’ll post it once I get it all worked out. Get it…worked out…work outs. Nvm. 

So far I’m 4 for 4 with my eating and exercising for February and I feel good.
